Today I got busy.  I woke up, ran my errands, did several blog posts and before I knew it, 5:00 had arrived.  I am trying to start the New Year eating at home when I am home, with meals on the healthier side.  My girls had dinner plans for the night, so I found myself trying to decide on something quick yet healthy to make myself to eat.  Since Minute® Ready to Serve Rice had asked that I be part of the most recent campaign, I found the perfect solution to my dinner woes.
