Jalapeño-Jack Biscuits

These biscuits make an amazing appetizer, side, or breakfast dish. They combine the buttery layers of homemade biscuits with a pop of chili and rich, spicy cheese. Look for more cheese and spice combinations in this article from Real Simple.

Recipe (for 10-12 biscuits):

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1/2 cup Pepper Jack cheese, shredded
  • 1 whole jalapeño, seeds removed and finely diced
  • 1/2 cup unsalted butter, softened
  • 2/3 cup milk
  • 2 tablespoons melted butter

Preheat your oven to 450°F. Combine flour, sugar, baking powder, cream of tartar, salt, jalapeño, and cheese in a large mixing bowl. Cut in the softened butter, using a pastry knife or two butter knives, until pieces are no bigger than peas. Add the milk gradually and stir until fully incorporated, adding more as needed. Turn dough out onto a floured surface and knead to a uniform consistency.

Once the dough is kneaded, cut into 2 1/2 inch circles and arrange on a baking sheet. Brush with melted butter. Bake at 450°F for 10-12 minutes, or until golden brown on top. Biscuits will last up to three days in a sealed container.

Broccoli Cheese Soup

Broccoli cheese soup is surprisingly easy to make at home and will be sure to impress. While it is typically made with cheddar, it is fun to experiment with other cheeses to create a huge variety of flavor combinations.

Recipe (for 6-8 serves):

  • 2 tablespoons unsalted butter
  • 2 pounds broccoli, chopped into 1-inch pieces
  • 1 cup onion, roughly chopped
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 3-4 cups water
  • 2 cups low-sodium chicken broth
  • 1 cup sharp cheddar cheese, shredded
  • 3/4 cup Parmesan cheese, finely grated

Heat butter in a large pot over medium-high heat. Once melted and bubbly, add broccoli, onion, garlic, and salt. Cook, stirring frequently, for about 6 minutes until mixture is fragrant. Add 1 cup of water, bring to a simmer, cover, and cook until the broccoli is very soft. This should take about 25 minutes.

Add the chicken broth and 2 cups of water, then increase heat to medium-high. When it begins to simmer, transfer half of the soup to a blender and add the cheddar and Parmesan. Process the mixture until smooth. Place soup back into the pot and repeat with the remaining soup. Over medium heat, bring soup back to a simmer. Adjust the consistency to taste by adding up to 1 cup of water.

Season to taste with salt and pepper, and serve with crusty Italian bread.

Blue Cheese Turkey Burger

Blue cheese can be a divisive ingredient, but for those who love it this is the ultimate burger, and for those who dislike it this burger may just change their minds. The Blue Cheese Turkey Burger combines a delicious patty with sweet caramelized onions and that blue cheese bite. As an added bonus, blue cheese also provides a variety of health benefits.

Recipe (for 4 serves):

  • 2 pounds ground turkey
  • 2 cloves garlic, minced
  • 1/4 cup sun dried tomato, minced
  • 1/3 cup breadcrumbs
  • 1 medium onion, thinly sliced
  • Table salt and ground black pepper
  • 4 ounces blue cheese
  • 4 hamburger buns, buttered and toasted

Combine turkey with garlic, tomato, and breadcrumbs. Divide evenly into 4 balls, then flatten into 3/4 inch patties. Refrigerate until ready to cook.

Adjust oven rack to the middle position, and preheat oven to 300°F. Season patties liberally with salt and pepper. Heat 1/4 cup vegetable oil in a 12-inch skillet over medium heat until it sizzles when water is sprinkled over the skillet. Sauté onion in oil until it achieves a rich golden color, stirring regularly. Remove onion from skillet and set aside. Add more oil to the skillet as needed to cook burgers, usually an additional 1/4 cup.

Using a spatula, transfer burgers to the skillet and cook without moving for 4-5 minutes before flipping and cooking the other side for the same amount of time. The internal temperate of the finished burgers should be 160°F, and no pinkness should remain.

Transfer patties to a baking sheet and top each with 1 ounce crumbled blue cheese. Bake until the cheese is gooey, about 3 minutes. Remove burgers from the oven and allow to rest on a plate for 5 minutes. Serve on buns topped with caramelized onion.
